Some Favorites!

Take a peek at some of my personal favorites I love to make after years of development in my kitchen.  These are sure hits with my family and friends :)

Kraut Beirocks

Seasoned beef cooked with cabbage and onion, wrapped in a slightly sweet bread.  The savory filling is usually a seasoned ground beef, but I like to use beef roast that has been shredded and minced.  This allows for a richer, somewhat fattier, more flavorful experience!  These pocket sandwiches serve the masses simply and the leftovers freeze well (that is, if there are any!)

Tacos

Three of my favorite ways to make the Mexican street food known now around the world:

  • Chicken mole. Topped with fresco cheese, radishes, cilantro.  Small corn tortillas

  • Mexican seasoned beef with tomatoes, onion and garlic, topped with traditional lettuce and tomato salad. Chihuahua cheese.  Flour tortilla 

  • Simmered pork, zucchini, yellow squash and garlic. Topped with lime cabbage salad and crema. Corn tortillas â€‹â€‹

Served with rice and beans​

Rouladen stew over spätzle

Flavors of German rouladen come alive with this easy to make and eat version! Braised beef with onions, pickles, dijon and bacon simmered in a hearty gravy and served over homemade spätzle noodles. 

Served with sweet pickled red cabbage

Tamales

Deep flavors of ancho chiles, cumin, oregano and garlic dominate your palate with this traditional dish!  10 hour slow-roasted pork shoulder is seasoned and then hand-wrapped in flavorful masa and corn husks and then steamed to cook and bring all the flavors together. 

These can really be enjoyed any time of day: With eggs and fresh pico de gallo for breakfast or with your favorite sides for lunch or dinner.
